Hot & Cheesy Mexican Street Corn Dip

This hot Mexican-style corn dip is addictively good and can be thrown together in just 15 minutes - making for a perfect party snack!

  • ½ cup Rizo Bros Cotija Cheese 
  • 1 cup Rizo Bros Queso Fresco
  • 2 tbsp Rizo Bros Spicy Cotija Cheese 
  • 12 oz Cream Cheese
  • 1 cup Sour Cream
  • 1 tbsp Garlic 
  • 2 tbsp Hot Sauce 
  • 1 tbsp Lime Juice 
  • 30 oz Corn 
  • 1 Jalapeño 
  • ⅓ cup Red Onion 
  • ¼ cup Cilantro 
  • 1 bag Tortilla chips


  1. Preheat the oven to 350 degrees. 
  2. In a mixing bowl, combine cream cheese and sour cream. Add garlic, hot sauce, lime juice, Rizo Bros Cotija Cheese, Queso Fresco, corn, red onion, 2 tsp cilantro  and 1 tbsp Rizo Bros Spicy Cotija Cheese. Combine well. 
  3. Place corn mixture into a cast iron skillet or greased baking dish. 
  4. Bake in the oven for 15 minutes. Top with additional Rizo Bros Spicy Cotija Cheese. Garnish with additional red onion, cilantro and diced jalapeño.
  5. Serve with tortilla chips.
