Heirloom Tomato & Herb Panela Salad

Serves: 4-6
Bright, light and bursting with flavor, this salad is great for a weekend lunch or dinner party!

  • 1 16oz package of heirloom tomatoes – halved
  • 1 8oz package Rizo Bros Panela – cubed
  • 2 cups mixed greens
  • ½ English cucumber – thinly sliced
  • ¼ cup red onion – thinly sliced
  • ½ cup fresh parsley – chopped
  • ½ lemon – juiced
  • ¼ cup pine nuts
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ⅛ tsp black pepper


  1. In a medium size bowl combine your halved tomatoes, cucumber, onion, parsley, lemon juice, balsamic, olive oil, salt, pepper, and toss until well mixed. 
  2. On a large plate lay out your bed of mixed greens. Pour your tomato mixture over the mixed greens, and top with the cubed Rizo Bros Panela Cheese and pine nuts. Drizzle with a little more olive oil and freshly cracked black pepper.
