Grilled Summer Squash and Grilling Cheese
Serves: 2
The savory combo of grilled summer squash and grilling cheese served with toasted Bolillo.
INGREDIENTS:
1 package Rizo Bros Grilling Cheese
1 zucchini
1 yellow squash
2 red onions
1 cup extra virgin olive oil
2 Bolillo rolls, cut diagonally into 1/2” slices
1 tbsp cumin
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp salt
1 tbsp black pepper
1/4 cup Rizo Bros Spicy Cotija Cheese
PREPARATION:
Preheat grill or stovetop griddle to medium high heat
Combine all dry seasonings in a small bowl
Cut squash and onions in half and remove skin from onions
Brush exposed faces of vegetables with olive oil
Season vegetables liberally with dry seasoning
Lay vegetables on grill perpendicular
After 3-4 minutes, rotate vegetables 90 degrees and allow to cook an additional 3 minutes
Brush cheese with olive oil and lay on grill
Rotate 90 degrees after 1 minute, flip and repeat the process on the other side
Brush Bolillo roll slices with olive oil and toast on grill until lightly charred
Cut halved squash diagonally into 1/2” pieces and quarter halved onions
Drizzle finished vegetables lightly with oil and garnish with Spicy Cotija cheese
