Grilled Peach and Cucumber Salad with Panela Cheese

This is the perfect salad for a summertime meal with grilled peaches, Panela cheese, and a lightly sweet honey dressing.

  • 2 ripe peaches
  • 1 Persian cucumber
  • 1 lime, zested and juiced
  • 1/2 cup olive oil
  • 2 tbsp honey
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1/4 cup chopped cilantro
  • 1 cup Rizo Bros Panela Cheese
  • 1 head iceberg or butter lettuce
  • 2 radishes, thinly sliced
  • 3 tbsp crema



  1. Preheat grill or stovetop griddle to medium heat
  2. Brush halved peaches with olive oil on the exposed faces
  3. Combine remaining olive oil, salt, pepper, and honey in mixing bowl
  4. Grill peaches for 2 minutes or until caramelized and tender
  5. Quarter iceberg or butter lettuce head and remove core
  6. Cut cucumber into 1/2” cubes
  7. Drizzle lettuce quarters with prepared dressing
  8. Top with sliced radish
  9. Quarter peach halves
  10. Top salad with peach halves and cucumber
  11. Top with crumbled Panela Cheese
  12. Drizzle salad with crema and garnish with cilantro
