Queso Fresco Enchiladas
Serves: 4-6
Our Queso Fresco perfectly compliments this recipe for flavorful chicken enchiladas.
INGREDIENTS:
1 pound ground chicken
1 jalapeno, finely diced
1 red onion, finely diced
2 tbsp crushed garlic
2 tbsp canola oil
2 tbsp ground cumin
1 tbsp chili powder
1 tbsp salt and pepper
4 cups enchilada sauce
6 small corn tortillas
2 cups Rizo Bros Queso Fresco, crumbled
PREPARATION:
Preheat oven to 325*F
Heat large skillet to medium/high heat
Add oil to pan
Place onion and jalapeƱo to skillet
Stir occasionally until they are slightly tender
Add garlic and stir until garlic is golden
Add chicken and break apart in pan
Cook chicken until it is cooked thoroughly
Season with salt, pepper, cumin, and chili powder
Mix half of Queso Fresco into filling and cool in refrigerator
Ladle 1/4 of sauce into base of baking dish
Lay out tortillas on cutting board and scoop equal amounts of filling into each tortilla
Roll tortillas and place in baking dish
Top tortillas enchiladas with remainder of sauce
Cover dish with foil and bake in oven for 30 minutes
Remove foil from dish and top with remainder of cheese
Bake additional 7 minutes
