Flat Iron steak with Corn and Chimichurri Sauce

Serves: 4
Flat-iron is an amazingly tender cut of beef and a snap to prepare. Pair it with this tangy corn and chimichurri sauce for a delicious dinner!

INGREDIENTS:

• 3 pounds Flat Iron Steak
• 3 bunches cilantro
• 6 cups sweet corn kernels (fresh, canned, or frozen)
• 5 cloves garlic
• 1 jalapeño
• 2 small radishes
• 1 red onion
• 1 cup Rizo Bros Cotija Cheese, grated
• 1/2 cup olive oil
• 1 tbsp cumin
• 1/2 tsp cayenne pepper
• 1 lemon
• 2 tbsp canola oil
• Salt and pepper

PREPARATION:

  1. Preheat grill or stovetop griddle to high heat
  2. Season steak on both sides with salt, pepper and olive oil
  3. Finely chop garlic and set to the side.
  4. Dice red onion and jalapeño and set to the side.
  5. Slice radishes thinly and set to the side.
  6. Bring a large sauté pan to medium-high heat
  7. Sauté ¾ of onions and entire jalapeño for 2 minutes.
  8. Add corn to pan and sauté until slightly charred
  9. Add about one third of garlic and sauté until garlic is slightly golden in color
  10. Season corn with salt, pepper, cumin and cayenne
  11. Cook steak on grill or griddle for approximately 3 minutes on each side or until your desired temperature
  12. Let steak rest for 7-10 minutes before slicing
  13. Serve steak on top of corn and drizzle with Chimichurri sauce
  14. Garnish with sliced radishes, cilantro and Rizo Bros Cotija Cheese

 

Directions for Chimichurri Sauce:

  1. Finely chop cilantro and place in small mixing bowl
  2. Zest and juice lemon. Add to mixing bowl
  3. Add remaining garlic, onions, olive oil, salt and pepper to mixing bowl. Combine all ingredients thoroughly
