Fall Veggie Egg Frittata

Serves: 4-6
This frittata is sure to be a hit with it's delicious fall veggies and onions.

  • 8 eggs
  • ½ cup Rizo Bros Grated Cotija Cheese
  • 2 cups kale
  • ½ yellow onion
  • 1 cup red bell pepper
  • 1 cup butternut squash
  • Salt and pepper


  1. Sautee kale, yellow onion, red bell pepper and butternut squash with olive oil
  2. Season with salt and pepper to taste
  3. Beat and mix in 8 eggs
  4. Place egg and vegetable mixture into cast iron or oven safe baking dish
  5. Bake at 400 degrees until eggs are cooked through, approximately 10 minutes
  6. Top with Grated Cotija Cheese
