Enchiladas Verde

Serves: 4-6
Easy to make, totally customizable with your favorite fillings, and topped with the creamiest cheeses!

  • 10 corn tortillas
  • 1 pound ground chicken
  • 1 large white onion
  • 1 jalapeno
  • 2 tbsp crushed garlic
  • T tbsp ground cumin
  • 1/2 cup cilantro
  • 4 cups salsa verde
  • 1 cup Rizo Bros Oaxaca Cheese
  • ½ cup Rizo Bros Queso Fresco
  • 1 tsp each salt and pepper
  • 2 tbsp butter


  1. Preheat oven to 350 degrees
  2. Preheat large skillet to medium-high heat
  3. Fine dice onion and jalapeño
  4. Sweat onion, garlic, and jalapeno for 2-3 minutes
  5. Season with salt, pepper, and cumin
  6. Add chicken and cook until chicken is fully cooked and broken apart
  7. Fold chopped cilantro into chicken mixture
  8. Grease deep baking dish with butter
  9. Smother bottom of baking dish with 1/4 of the salsa
  10. Lay tortillas on cutting board and scoop even amounts of cooked chicken into center of tortillas
  11. Roll tortillas and lay in baking dish
  12. Cover rolled tortillas with remainder of sauce
  13. Break apart Oaxaca cheese by hand and evenly distribute on top of enchiladas and top with crumbled Queso Fresco
  14. Bake enchiladas in oven for 10-12 minutes or until sauce is bubbly and cheese is melted
