Enchilada Meatballs with Spicy Cojita

Serves: 4-6
A new take on the classic meatball, this dish uses enchilada sauce and Spicy Cotija Cheese to make your family meal time that much better.

  • Rizo Bros Spicy Cotija
  • 1 -10 oz can Enchilada Sauce
  • 1 lb Ground Beef
  • ¼ cup Panko Bread Crumbs
  • 4 tbsp Milk
  • 2 egg yolks
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 2 tsp Cumin
  • 2 tsp Chili Powder
  • 1 tsp Salt and Pepper
  • Cilantro (garnish)


  1. Preheat oven to 350 degrees.
  2. In a small mixing bowl, combine panko bread crumbs and milk. Fluff with a fork until panko has absorbed the milk. Set aside.
  3. In a medium mixing bowl, combine raw ground beef, spices and egg yolks. Add the panko mixture to the ground beef and combine.
  4. Once combined, roll meatballs into 1-inch sized balls and place in a 9×13” baking dish.
  5. Cover meatballs with enchilada sauce and bake for 20 minutes or until cooked through.
  6. Top cooked meatballs with Rizo Bros Spicy Cotija and garnish with cilantro.
