Elote Pizza

Serves: 4-6
Delicious pizza with sweet corn and fresh cilantro topped with Oaxaca Cheese.

  • 1 pizza dough (fresh or par baked)
  • 1 can sweet corn kernels
  • 1 small red onion, sliced very thin
  • 1 cup Rizo Bros Oaxaca Cheese, shredded
  • 1 cup pizza sauce
  • ½ cup cilantro, roughly chopped
  • ¼ cup crema
  • 1 tbsp paprika
  • ¼ cup Rizo Bros Spicy Grated Cotija Cheese


  1. Preheat oven to 400* F
  2. Dust wooden cutting board with flour or semolina flour
  3. For fresh pizza dough, spread pizza dough on flour board to desired thickness and diameter
  4. Set a medium cast iron skillet on range to medium-high heat
  5. Add drained and dried corn kernels to pan without any oil or fat
  6. Cook stirring occasionally until exterior of corn kernels are turning lightly brown
  7. Add 1 tbsp butter to pan and stir about 30 seconds
  8. Promptly remove corn from pan to avoid burning the butter
  9. Line nonstick cookie sheet with tin foil and brush foil lightly with olive or cooking oil
  10. Lay dough flat on sheet and adjust to desired size or diameter
  11. Spread desired amount of pizza sauce on dough and add shredded Oaxaca cheese
  12. Top pizza with corn
  13. Bake in oven about 10-12 minutes or until crust is crispy and golden and cheese is bubbly and evenly melted
  14. Remove pizza from cookie sheet to previously dusted cutting board, cut and garnish with red onion, a drizzle of crema, cilantro, spicy cotija, and a dusting of paprika
