Serves: 6 Filled with classic Spanish flavors and topped with a buttery pastry, this quiche is a welcoming addition to any brunch table.
INGREDIENTS:
1/4 cup Rizo Bros Cotija Cheese
10 Eggs
1 ½ cups Chorizo
1/2 cup Bell Pepper (Green and/or Red)
1/4 cup Cilantro
1/8 cup Green Onion (diced)
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
Salt and Pepper (to taste)
Jalapeño (garnish)
PREPARATION:
Preheat oven to 350 degrees F.
In a mixing bowl, combine eggs, chorizo, bell pepper, cilantro (reserve some for garnish), green onion, Rizo Bros Cotija Cheese, garlic powder, onion powder, salt and pepper.
Mix until thoroughly combined.
Spray cast iron or oven safe baking dish with cooking spray. Pour egg mixture in pan.
Bake for 20 minutes or until eggs have cooked throughout.
