Crispy Baked Breakfast Tacos

Serves: 2-4
These crispy baked breakfast tacos are the perfect way to start your day! They're made with scrambled eggs, cheese, and your favorite toppings, and they're baked until the cheese is melted and bubbly. Serve them with salsa for a satisfying breakfast.

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Scramble the eggs: Heat a spoonful of olive oil in a medium saucepan over medium low heat. Beat the eggs with a pinch of salt and pepper, then pour into the hot pan. Cook, pushing the eggs around the pan and scrambling as you go, until firm. Set aside and let cool for at least 5 minutes.
  3. Make tortillas pliable by microwaving them in a damp paper towel for 30 seconds or so.
  4. Place a tortilla on a baking sheet and brush the edges of the tortilla with a small amount of olive oil. Place a spoonful of scrambled eggs in half of the corn tortilla, then top with some oaxaca. Fold the other half of the tortilla over the egg mixture, pressing on the edges. Repeat with the remaining 5 tortillas. Brush the top of each tortilla with more olive oil.
  5. Transfer the baking sheet to the oven and bake for 8 minutes or until crisp on the bottom. Flip and bake for another 4 minutes, or until crisp on both sides.
  6. Remove and let cool for 2-4 minutes. Serve with crumbled queso fresco to top and with salsa to dip.
