Creamy Taco Spaghetti with Queso Oaxaca

Serves: 2-4
This is the marriage of two great dishes - tacos and spaghetti! As a bonus, it's quick and easy to make.

  • 1 lb ground beef
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1, 1 oz packet taco seasoning
  • 1, 14 oz can fire roasted tomatoes, undrained
  • 8 oz cream cheese
  • 4 oz Rizo Bros Queso Oaxaca, shredded
  • 1 lb spaghetti noodles
  • Cilantro, to garnish


  1. Heat a large skillet over medium heat and add the beef, bell pepper, and onion. Cook, stirring often and breaking up the beef, until it’s browned, about 5-7 minutes.
  2. Add the taco seasoning and stir to combine. Add the fire roasted tomatoes and cream cheese. Cook for about 5 minutes, stirring often, until the cream cheese is melted and the mixture is bubbling. Stir in the shredded cheese.
  3. Meanwhile, cook the pasta according to package directions.
  4. Add the cooked pasta into the beef mixture and stir until well combined.
  5. Serve warm with extra shredded oaxaca and cilantro if desired!
