Serves: 2-4 Horchata is a traditional Mexican drink made up of white rice soaked in water, it's flavored with cinnamon and is refreshingly creamy.
INGREDIENTS:
1 cup white rice
⅓ – ½ cup honey, depending on preference
2 cinnamon sticks, crushed
1 tsp vanilla extract
1 ½ cup water
1 ½ milk of choice
1 9.5 oz can evaporated milk
½ tsp ground cinnamon
Pinch of salt
PREPARATION:
In a large bowl, add the water, milk, rice, and crushed cinnamon sticks. Gently stir to combine and let sit in the fridge overnight.
In a high speed blender, combine rice mixture, evaporated milk, honey, vanilla, and salt. Blend until smooth, about 2 minutes. Transfer to a nut bag or fine mesh strainer over a large bowl and strain the mixture pressing on the solids.
Whisk in ground cinnamon and let chill in the fridge for 1 hour.
