Creamy Horchata

Serves: 2-4
Horchata is a traditional Mexican drink made up of white rice soaked in water, it's flavored with cinnamon and is refreshingly creamy.

INGREDIENTS:

  • 1 cup white rice
  • ⅓ – ½ cup honey, depending on preference
  • 2 cinnamon sticks, crushed
  • 1 tsp vanilla extract
  • 1 ½ cup water
  • 1 ½ milk of choice
  • 1 9.5 oz can evaporated milk
  • ½ tsp ground cinnamon
  • Pinch of salt

PREPARATION:

  1. In a large bowl, add the water, milk, rice, and crushed cinnamon sticks. Gently stir to combine and let sit in the fridge overnight.
  2. In a high speed blender, combine rice mixture, evaporated milk, honey, vanilla, and salt. Blend until smooth, about 2 minutes. Transfer to a nut bag or fine mesh strainer over a large bowl and strain the mixture pressing on the solids.
  3. Whisk in ground cinnamon and let chill in the fridge for 1 hour.
  4. Serve over nice and enjoy!
