Crab Stuffed Mushrooms

Serves: 2-4
These crab stuffed mushrooms are mushroom caps filled with crab, jalepeño and two types of Rizo Bros cheese, then baked to golden brown perfection.

INGREDIENTS:

  • 2 cups lump crab meat
  • 1/2 cup red onion, fine diced
  • 1 jalapeño, fine diced
  • 1 lime, zested and juiced
  • 1 cup Rizo Bros Oaxaca cheese
  • 1/2 cup Rizo Bros Cotija cheese
  • 1/2 cup créma
  • 1/4 cup panko bread crumbs
  • 6 small Portobello Mushrooms, stems and gills removed
  • 1/2 cup tomato, small diced

PREPARATION:

  1. Combine all ingredients except for mushroom in a small bowl
  2. Season mixture to taste
  3. Pack mixture into cavity of mushroom
  4. Bake on a small sheet tray in a 300 degree oven for 15 minutes
