Serves: 2-4 These crab stuffed mushrooms are mushroom caps filled with crab, jalepeño and two types of Rizo Bros cheese, then baked to golden brown perfection.
INGREDIENTS:
2 cups lump crab meat
1/2 cup red onion, fine diced
1 jalapeño, fine diced
1 lime, zested and juiced
1 cup Rizo Bros Oaxaca cheese
1/2 cup Rizo Bros Cotija cheese
1/2 cup créma
1/4 cup panko bread crumbs
6 small Portobello Mushrooms, stems and gills removed
1/2 cup tomato, small diced
PREPARATION:
Combine all ingredients except for mushroom in a small bowl
Season mixture to taste
Pack mixture into cavity of mushroom
Bake on a small sheet tray in a 300 degree oven for 15 minutes
