Cowboy Caviar with Queso Fresco

Serves: 2-4
This simple dip is known as cowboy caviar and it's a favorite at tailgates and potlucks. Easy to make and especially delicious.

INGREDIENTS:

  • ¼ cup extra virgin olive oil
  • 2 tbsp lime juice
  • 1 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • ½ tsp chili powder
  • ½ tsp salt, or to taste
  • ½ tsp ground black pepper
  • 1, 15 oz can black beans, drained and rinsed
  • 1, 15 oz can black eyed peas, drained and rinsed
  • 1 cup corn kernels
  • 2 medium roma tomatoes, finely diced
  • 1 medium bell pepper, finely diced
  • ½ small red onion, finely diced
  • 1 jalapeno, minced
  • ¼ cup chopped cilantro
  • ½ cup Rizo Bros Queso Fresco, crumbled

PREPARATION:

  1. In a medium bowl, whisk together the olive oil, lime juice, vinegar, honey, garlic, chili powder, salt, and pepper.
  2. Add the remaining ingredients except for the queso fresco to the bowl and toss well to combine and coat all ingredients in the dressing.
  3. Top with crumbled queso fresco immediately before serving and enjoy as a side or dip with chips!
