Cotija Guacamole

Serves: 4-6
Try our sharp, salty Cotija Queso crumbled on top of homemade guacamole - with a side of chips of course.

  • ¼ cup Rizo Bros Cotija Queso, crumbled
  • 3 ripe avocados, whole
  • 1 lime, freshly squeezed for juice
  • 2 cloves garlic, diced
  • ½ cup cilantro, diced
  • ½ cup onion, diced
  • salt & black pepper to taste, freshly ground


  1. Slice avocados lengthwise and open to expose the pit. Remove pit and scrape avocado flesh into medium-sized bowl. Mash avocado with fork until avocado is soft, like a paste.
  2. Add diced garlic, onion, cilantro to avocado mash and gently mix together using fork or spatula.
  3. Squeeze the juice from 1 lime into avocado mixture. Season with freshly ground salt & black pepper to taste. Mix ingredients together.
  4. Crumble ¼ cup of Rizo Bros Cotija Queso and sprinkle on top of guacamole. Serve with your favorite tortilla chips. Scoop, eat, repeat!
