Cilantro Pesto Pasta

Serves: 4-6
This cheesy cilantro pesto pasta makes the ideal summer lunch or dinner.

  • 1 package dried pasta (your favorite shape)
  • 2 cups cilantro
  • 5 cloves garlic
  • 1/2 cup olive oil
  • 2 tbsp salt
  • 2 tbsp pepper
  • 1 cup Rizo Bros Cotija Cheese
  • 1/4 cup Rizo Bros Queso Fresco
  • 1/4 cup pepita seeds (plus 2 tbsp for garnish)
  • 1 red bell pepper, small diced
  • 2 tbsp butter
  • 1/2 cup cream


  1. Place cilantro, garlic, olive oil, salt, pepper, peptic seeds, and Cotija cheese in blender and blend on high for 1 minute or until smooth
  2. Season a pot of water with salt and bring to a boil
  3. Cook pasta in water until al dente
  4. Bring a sauté pan to medium heat and melt butter in pan
  5. Add peppers pan and season lightly with salt and pepper
  6. Once peppers are tender, add cream
  7. Once cream is slightly reduced, add cilantro pesto and stir to combine
  8. Toss pasta in completed sauce and serve garnished with pepita seeds and Queso Fresco
