Chorizo Stuffed Potato Skins

Serves: 8
These creamy, spicy skins are a delicious and kickin' appetizer recipe!

INGREDIENTS:

  • 2 russet potatoes
  • 1 pound chorizo sausage
  • 2 tbsp crushed garlic
  • 1 medium red onion
  • 1 jalapeno
  • 2 tbsp olive oil
  • 1 cup Rizo Bros Spicy Cotija Cheese
  • 1 cup chopped cilantro
  • ¼ cup sour cream
  • Tapatio hot sauce

PREPARATION:

  1. Preheat oven to 350 degrees
  2. Bake potatoes on a sheet tray for 40 minutes or until soft to the touch
  3. Once potatoes are cooked, cut potatoes in half lengthwise
  4. Scoop potato from skins, leaving 1/4” of potato from skin
  5. Let potato skins cool in refrigerator
  6. Heat large sauté pan on medium-high heat
  7. Add oil to pan and add garlic, onion, and jalapeño to pan
  8. Sweat vegetables for 2 minutes and add chorizo
  9. Sauté chorizo until completely cooked through and break up into small pieces
  10. Scoop filling into potato skins
  11. Top with spicy cotija cheese and place skins in oven for 5-7 minutes or until cheese is melted
  12. Garnish finished potato skins with cilantro, sour cream and Tapatio hot sauce to taste
