Chorizo & Queso Fresco Dip

Serves: 4-6
This fantastic, warm, cheesy dip is easy to make and perfect for every get together!

INGREDIENTS:

  • 1 package beef or pork chorizo
  • 1 jalapeño, finely diced
  • 1 cup red onion, finely diced
  • 2 cups Rizo Bros Oaxaca
  • 4 cups cream
  • 2 cups whole sweet corn kernels
  • 1 cup cilantro, chopped
  • 1 cup Rizo Bros Queso Fresco
  • 1/cup tomato, small diced
  • Salt and pepper
  • 2 tbsp oil

PREPARATION:

  1. Bring large sauté pan to medium-high heat
  2. Add oil to pan and add jalapeño and onion
  3. Cook until both are tender and lightly caramelized
  4. Add corn and tomato and cook until soft
  5. Add chorizo and break apart until chorizo is cooked through and lightly crispy
  6. Add salt and pepper to taste
  7. Add cream and bring to simmer
  8. Cook cream until reduced by 1/3
  9. Add Oaxaca and Queso Fresco cheeses and combine until smooth
  10. Fold cilantro into dip
  11. Top with additional Queso Fresco
