Chorizo Cornbread Stuffing

Ditch your typical stuffing and try this delectable recipe kicked up with flavorful chorizo sausage and Grated Spicy Cotija cheese!

  • 1 lb crumbled chorizo sausage
  • 1 cup small diced white onion
  • ½ cup small diced carrot
  • ½ cup small diced celery
  • 2 cups corn bread, broken apart by hand
  • ½ cup cilantro, rough chopped
  • ½ cup chicken stock
  • 2 tbsp butter
  • ½ cup Rizo Bros crumbled spicy cotija cheese
  • 1 tsp crushed garlic


  1. Preheat oven to 350*
  2. Heat up a medium sauté pan to medium heat
  3. Melt butter and add chorizo sausage
  4. Cook sausage until cooked through
  5. Add onion, celery, carrot, and garlic
  6. Cook until vegetables are slightly softened
  7. Fold broken up cornbread into mix gently
  8. Lightly grease shallow casserole dish and add cornbread mix
  9. Pour chicken stock over top of mix
  10. Cover with foil and bake for 15-20 minutes or until surface of stuffing is golden brown
  11. Serve garnished with cotija and cilantro
