Chorizo Cheeseburger

This chorizo burger is stacked with sliced Rizo Bros Oaxaca cheese, jalapeños, tomatoes & shredded lettuce with homemade aioli.

INGREDIENTS:

  • 1 pound ground beef
  • 1/4 pound chorizo
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp salt and pepper
  • 1 whole egg
  • 1 package brioche burger buns, split and heated
  • 2 avocados, sliced
  • 1 cup pickled jalapeños
  • 2 cups grated Oaxaca cheese
  • 2 heirloom tomatoes, cut 1/4” thick
  • 1 cup aioli

PREPARATION:

 

  1. Place chorizo, beef, egg, and dry seasoning into a mixing bowl
  2. Combine ingredients thoroughly and form in 4 oz patties
  3. Heat medium skillet to medium-high heat
  4. Place burgers into pan and cook to desired temperature
  5. Top with Oaxaca cheese, add a dash of water to pan and quickly cover
  6. Keep covered for 30 seconds or until cheese is melted
  7. Spread each bun with aioli and top with patty
  8. Top patties with avocado, tomato, and jalapeños
