Chorizo Burrito Bowl

Serves: 2-4
This yummy chorizo burrito bowl will make lunch or dinner feel like a fiesta! Top with avocado crema and grated Cotija Cheese for extra creaminess.

INGREDIENTS:

  • 1 cup white rice, steamed
  • 1/2 cup cooked black beans
  • 1/2 cup chorizo
  • 2 tbsp oil
  • 1 cup shredded romaine lettuce
  • 1/4 cup Rizo Bros Queso Fresco, crumbled
  • 1/2 avocado
  • 1 lime, zested and juiced
  • 1/4 cup crema
  • Salt and pepper
  • 1 tsp ground cumin

PREPARATION:

  1. Heat medium skillet to medium high heat
  2. Add oil to pan and coat, add chorizo
  3. Cook chorizo, breaking up as it cooks
  4. Remove cooked chorizo from pan and set aside
  5. Place avocado, crema, lime juice and zest, and all seasoning to small mixing bowl
  6. Whisk all ingredients until smooth, taste for seasoning
  7. Place rice in bottom of bowl
  8. Top rice with lettuce
  9. Top lettuce evenly with black beans
  10. Top with crumbled chorizo
  11. Garnish with Rizo Bros Queso Fresco
  12. Drizzle avocado crema over the top
