Chorizo and Oaxaca Stuffed Peppers

Serves: 2-4
These stuffed peppers with Rizo Bros Oaxaca cheese are what dinner dreams are made of!

  • 1 tube of beef or pork chorizo
  • 2 cup cooked white rice
  • 2 tbsp oil
  • 1/2 cup white onion, finely diced
  • 1 jalapeƱo, finely diced
  • 2 tbsp tomato paste
  • 2 cups Rizo Bros Oaxaca cheese
  • 1 cup Rizo Bros Cotija cheese
  • 1/2 cup cilantro
  • Salt and pepper
  • 4 Pasilla Chiles


  1. Roast Passilla Chiles in 350 degree oven for 10 minutes
  2. Place in medium bowl and cover with plastic wrap
  3. Bring large pan to medium-high heat
  4. Add oil to pan and cook onions and jalapeƱos
  5. Add chorizo to pan and cook until lightly crispy
  6. Add tomato paste and cook through
  7. Add rice and stir until coated
  8. Lay chorizo filling on plate and refrigerate for 30-40 minuets or until cooled
  9. Scoop filling into bowl and add both cheeses and cilantro
  10. Remove cooled chiles from bowl and cut 3 inch slit down middle of chile
  11. Stuff chiles with filling and lay on small cookie sheet
  12. Bake in 300 degree oven for 10-15 minutes or until cheese in chile is melted
