Chili Lime Salmon and Cotija Street Corn
Serves: 4
Nothing spices up a dish like some crumbled cotija & chili lime salmon!
INGREDIENTS:
½ cup Rizo Bros Cotija Cheese
4 Salmon Filets
¼ cup Cilantro
2 cups of Corn
1 tsp Garlic
1 tsp Garlic Powder
1 tsp Lime Zest
2 tsp Lime Juice
2 tsp Chili Powder
1 tsp Paprika
2 tsp Olive Oil
½ cup Sour Cream
¼ cup Red Onion
Lime (garnish)
Salt and Pepper (to taste)
PREPARATION:
Season salmon filets with garlic powder, 1 tsp chili powder, paprika, salt and pepper.
In a pan, heat olive oil and sear seasoned salmon on both sides.
In a mixing bowl, add corn, sour cream, lime zest, lime juice, crushed garlic, cilantro, red onion, 1 tsp chili powder and Rizo Bros Cotija Cheese.
Once salmon is cooked through, plate over street corn, garnish with lime and serve.
