  • 1 tbsp avocado oil
  • ½ cup diced onion
  • 1 bell pepper, diced
  • 1 tbsp taco seasoning
  • ¼ cup black beans
  • ¼ cup corn kernels
  • 1 lb premade pizza dough
  • ½ cup pizza sauce, plus more to serve
  • 1 ½ cups shredded Rizo Bros Queso Oaxaca
  • Sour cream, to serve

PREPARATION:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Heat a medium skillet over medium heat and add the oil. Once the oil is heated, add the onion and bell pepper. Saute, stirring occasionally, until mostly tender, about 5 minutes.
  3. Stir in the taco seasoning, then the black beans and corn. Remove from heat and let cool for 10 minutes.
  4. Roll out the pizza dough on a floured surface to about ¼ inch thick. Cut into 6 rectangles.
  5. Place the rectangles of dough in the skull molds. Spoon some pizza sauce in each skull, then some shredded cheese, then some of the veggie and bean mixture. Fold the pizza dough over the filling in each skull, sealing each one.
  6. Bake for 15-20 minutes or until the dough is golden brown and cooked. Serve hot with extra pizza sauce and sour cream to dip!
