Cheesy Oaxaca Black Bean Dip

Serves: 4-6
This delicious cheesy bean dip is super easy to make and is great wrapped in a corn tortilla or tortilla chips.

INGREDIENTS:

  • 8 oz Rizo Bros Oaxaca Cheese, shredded
  • 1 tbsp minced garlic
  • 2 tbsp taco seasoning of choice
  • ¼ cup red salsa of choice
  • ½ tsp red pepper flakes
  • Pinch of salt
  • 2, 14.5 oz cans black beans
  • Crema
  • Cilantro

PREPARATION:

  1. Preheat the oven to 375 degrees F.
  2. Drain only one of the cans of black beans and leave one of the cans in the liquid.
  3. Heat a skillet over medium heat and add the garlic, taco seasoning, salsa, red pepper flakes, and a pinch of salt. Stir frequently for about 1 minute until fragrant.
  4. Add the black beans and bring to a simmer. Once the black beans are simmering, use a potato masher to mash the beans. Leaving some whole is okay.
  5. Sprinkle the shredded Oaxaca over the beans evenly. Cover with foil and place in the preheated oven for 10 minutes to melt. Remove the foil and broil for 2 minutes if desired for a golden crisp.
  6. Drizzle with crema and garnish with cilantro if desired. Serve immediately with tortilla chips or wrap in a corn tortilla.
