Cheesy Huevos Rancheros Breakfast Casserole
Huevos rancheros or "ranch eggs" are the perfect breakfast - warm, hearty and flavorful.
10 small corn tortillas
2 cups cooked black beans
1 ½ cups chunky salsa
2 ½ cups shredded
Rizo Bros Queso Oaxaca
6 large eggs
Preheat the oven to 400 degrees Fahrenheit.
Lay 5 tortillas in the bottom of a large baking dish, overlapping slightly.
Spread half of the black beans over the corn tortillas. Spread half of the salsa over the black beans. Sprinkle half of the shredded cheese over the salsa.
Lay the remaining 5 tortillas on top of the shredded cheese and repeat the layering of black beans, salsa, and cheese.
Use a spoon or other utensil to make 6 wells on the top of the casserole. Carefully crack the 6 eggs into the wells.
Bake in the preheated oven for 30-35 minutes, or until the whites of the eggs are set and the cheese is bubbly.
