Cheesy Hasselback Zucchini

  • 3 medium zucchini
  • 1 tbsp avocado oil
  • Pinch salt and pepper
  • ¼ tsp dried granulated garlic
  • Rizo Bros Queso Fresco, crumbled
  • Chopped cilantro, to top


  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Cut the zucchinis hasselback style: Slice the zucchini vertically almost all the way, leaving about ½ inch of the zucchini unsliced at the bottom so it doesn’t fall apart. You should be able to fan out the slices of zucchini.
  3. Brush the cut zucchini with the oil. Season with a pinch of salt and pepper and the garlic.
  4. Bake for about 15 minutes or until just fork tender and browned on the bottom. Sprinkle with desired amount of queso fresco, tucking some of the cheese in between the slices.
  5. Continue baking for another 5 minutes or so until the cheese is slightly browned and melty. Serve immediately and enjoy!
