Cheesy Cotija Corn Fritters

Serves: 2-4
Is there anything better than fried potatoes and cheese? How about fried potatoes and cheese with a creamy chili crema dipping sauce?

INGREDIENTS:

Fritters

 

  • 3 cups cooked corn (fresh, frozen, or canned)
  • ¼ cup cilantro, chopped
  • 1 jalapeño, finely chopped
  • ½ lime, zest and juice
  • 2 eggs
  • 3 tbsp mayonnaise
  • ⅓ cup Rizo Bros Grated Spicy Cotija
  • ¾ cup flour, all purpose
  • 1 tsp baking powder
  • 1 tsp avocado oil

 

Crema Sauce

 

  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • ½ lime, juiced
  • ¼ tsp chili powder

PREPARATION:

  1. In a medium bowl, stir together the corn, cilantro, jalapeño, lime juice, and lime zest
  2. In a separate small bowl, whisk eggs. Whisk in mayonnaise and Rizo Bros Grated Spicy Cotija. Pour egg mixture into corn mixture and combine.
  3. Add flour and baking powder to corn mixture, mixing well. 
  4. Heat a large skillet over medium high heat. Add 1 teaspoon of avocado oil and coat the pan. 
  5. When the oil is hot, use a ¼ measuring cup to scoop even amounts of batter into the hot pan. Immediately flatten the fritter gently with the back of the measuring cup.
  6. Fry each fritter about 2-3 minutes per side, until golden brown, crisp, and cooked through.
  7. In a small bowl, whisk together sour cream, mayonnaise, lime, and chili powder.
  8. Serve fritters hot with the sauce for dipping or drizzled on top of fritters. Top with more Rizo Bros Spicy Cotija if desired.
