Cheeseburger Quesadilla

Serves: 1-2
Cheesy quesadilla with Oaxaca and Blanco cheeses, filled with all the goodness of a cheeseburger.

  • 2 medium flour tortillas
  • 1 cup Rizo Bros Oaxaca Cheese, shredded
  • 1/4 lb ground beef
  • 1/4 cup white onion, finely chopped
  • 1 Roma tomato, medium diced
  • 1/4 cup cilantro leaves
  • salt and pepper


  1. Heat flat top stovetop griddle to medium heat
  2. Heat small sauté pan to medium heat and add oil to pan
  3. Add onions to pan and allow to cook for about two minutes
  4. Add ground beef and cook until beef is browned
  5. Season with salt and pepper
  6. Lay tortillas on flat top and sprinkle cheese on top
  7. Once cheese is melted, add ground beef, tomato and cilantro
  8. Fold quesadillas in half and serve
