Carnitas Torta with Queso Fresco

The ultimate Mexican carnitas torta with pork, pickled onions, avocado an Queso Fresco.
INGREDIENTS:
1 cup pork carnitas (Vallarta pork or your favorite recipe)
1 Bolillo roll
1 fresh jalapeno, thinly sliced
½ cup thinly cut green lettuce
½ cup refried beans
¼ cup salsa verde
¼ cup chopped cilantro
2 tbsp pickled onions
½ avocado, thinly sliced
Rizo Bros Queso Fresco
PREPARATION:
Lightly toast roll in toaster oven or convection oven at 350* for 3 minutes
Cook refried beans in covered bowl in microwave for 2 minutes
Split Bolillo roll down the middle and open
Spread bottom half of roll with refried beans
Top beans with carnitas
Top carnitas with salsa verde
Top carnitas with jalapeno, pickled onion, cheese, lettuce, queso fresco and avocado
Top with top half of roll, cut in half
