Buffalo Chicken Stuffed Bell Peppers

Serves: 2-4
These stuffed bell peppers have a creamy filling of shredded chicken and buffalo sauce which melts in your mouth with every bite! The best part about these stuffed bell peppers is that you can simply prepare them ahead of time, refrigerate or freeze until ready to bake!

INGREDIENTS:

PREPARATION:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Mix the shredded chicken with the buffalo sauce, green onion, shredded cheese, and a pinch of salt and pepper.
  3. Stuff the halved bell peppers with the buffalo chicken mixture and place the peppers in a baking dish.
  4. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and the peppers are just tender.
  5. Remove from the oven and top with Rizo Bros Cotija Cheese and other desired toppings such as sour cream and chopped fresh cilantro.
