Breakfast Tostadas

The perfect breakfast dish with crispy corn tostadas topped with beans and a fried egg.

  • 1 package corn tortilla tostadas
  • 1 can refried black beans
  • 3-4 eggs, cooked sunny side up
  • 1 roma tomato, small diced
  • 1 large avocado, thinly sliced
  • 1/2 cup cotija cheese, grated
  • 1/4 cup cilantro, rough chopped


  1. Heat refried black beans and season with salt and pepper
  2. Smear each tostada with refried black beans
  3. Top each tostada with sunny side up egg
  4. Top with sliced avocado
  5. Sprinkle each toasted with small amount of diced tomato
  6. Garnish with cotija cheese and cilantro
