Serves: 1-2 Crispy quesadillas filled with beans, spinach, fresh spices and lots of cheese!
2 flour tortillas
2 cups spinach
½ cup black beans – drained and rinsed
½ cup Rizo Bros Oaxaca – shredded
¼ cup Rizo Bros Queso Blanco – shredded
1.5 tbsp avocado oil – divided
½ tsp garlic powder
¼ tsp salt
¼ tsp cumin
⅛ tsp black pepper
⅛ tsp paprika
Heat up a small saucepan over medium heat with ½ tbsp avocado oil and add in your spinach. Saute until just about wilted.
Add your black beans, seasonings, and stir until well combined. Remove from heat while you prepare the quesadilla.
In a small bowl, mix together the shredded Oaxaca and Blanco to make your cheese blend.
Heat up a large skillet with 1 tbsp avocado oil on medium heat. To assemble the quesadilla, place one of the tortillas in the heated skillet, sprinkle half of the cheese blend all over the tortilla, spread out the spinach and black bean mixture, sprinkle the rest of the cheese over the spinach and black beans, then place your second tortilla on top.
Once the tortilla is golden brown after about 2 minutes, carefully flip the quesadilla to the next side. Once that side is golden brown and the cheese is melted, remove from the pan and top with desired toppings.
