Black Bean Enchilada Dip

Serves: 4-6
This dip is super delicious and easy to make. Just start with refried black beans, enchilada sauce and sour cream. Then top with shredded queso Oaxaca, green onion, cilantro and serve it with tortilla chips for a fun party app.

  • 2 tbsp extra virgin olive oil
  • 1 medium white onion, diced
  • 1 bell pepper, diced
  • 2 tbsp taco seasoning
  • ¼ tsp red pepper flakes
  • 2, 15 oz cans black beans
  • 10-15 oz enchilada sauce – not las palmas
  • ½ cup sour cream
  • 8 oz Rizo Bros Queso Oaxaca, shredded, divided
  • Garnish with green onion, cilantro
  • Tortilla chips to serve


  1. Sauté onion and bell pepper in oven safe skillet
  2. Add spices
  3. Stir in enchilada sauce and black beans
  4. Simmer awhile
  5. Stir in sour cream, cheese
  6. Top with cheese, bake at 400 for 20 mins, broil on high for 2-3 minutes
  7. Let settle for like 10 minutes to firm up
  8. Garnish with green onion, cilantro or whatever else
