Black Bean & Corn Salad with Cotija

Serves: 2-4
This black bean and corn salad is a fresh mix of black beans, corn, onions, bell pepper and cilantro, all tossed in lime juice and topped with cotija cheese.

  • 12 oz bag frozen corn, thawed
  • 14 oz can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • ½ red onion, diced
  • ½ cup cilantro, chopped
  • 1 tbsp olive oil
  • 2 limes, juiced
  • Pinch of salt
  • Rizo Bros Grated Cotija


  1. Combine all ingredients except the cotija into a large mixing bowl.
  2. Gently mix until thoroughly combined.
  3. Add in the desired amount of cotija cheese (we recommend starting with ¼ cup), then add more as desired. Mix again.
  4. Serve by itself or alongside tortilla chips.
