Baked Tomato & Queso Fresco Pasta

Serves: 4-6
This flavorful pasta features fresh basil and our Queso Fresco and is perfect for a quick, flavorful dinner.

INGREDIENTS:

  • 1 8 ounce package Rizo Bros Queso Fresco
  • 4 cups cherry tomatoes
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes
  • ¼ cup oil
  • Sea salt
  • Black pepper
  • 1 cup basil, chopped
  • 2 ½  cups pasta

PREPARATION:

  1. Preheat the oven to 425 degrees fahrenheit and lightly grease a 9×9 inch baking dish.
  2. Place the 8 ounce round of queso fresco into the bottom of the dish. Spread the tomatoes around the cheese.
  3. Pour the garlic, red pepper flakes, oil, and a pinch of salt and pepper over the tomatoes. Toss to coat.
  4. Roast for about 20-25 minutes until the tomatoes are blistered and the queso fresco is soft.
  5. Meanwhile, cook the pasta according to package directions. Drain once cooked.
  6. Use a fork or spoon to mash up the tomatoes and queso fresco. Add the basil, pasta, and stir. 
  7. Garnish with more basil if desired.
