Baked Grilling Cheese with Roasted Tomatoes and Chickpeas

Serves: 1-2
This baked grilling cheese, tomato and chickpea bowl is made on a single baking dish in the oven, making for an easy weeknight dinner!

INGREDIENTS:

  • 1 Rizo Bros Grilling Cheese
  • 1, 8 oz can Chickpeas
  • 20 Cherry Tomatoes
  • 1 tbsp Olive Oil
  • 1 tsp Oregano
  • Basil (garnish)
  • French Bread Baguette

PREPARATION:

  1. Slice Rizo Bros Grilling Cheese into two wedges.
  2. Add grilling cheese, chickpeas, cherry tomatoes to a baking dish. Drizzle with olive oil and season with oregano, salt and pepper.
  3. Bake in a 400 degree oven for 15 minutes or until tomatoes have roasted and cheese is golden brown.
  4. Serve alone as a side dish or with a toasted baguette as an appetizer.
