Serves: 2-4 This recipe for baked fries with Queso Fresco aioli is as easy as 1, 2, 3! All it takes is a little bit of prep, and then while the fries bake in the oven create a quick aioli that is sure to please.
INGREDIENTS:
1 lb gold potatoes (about 2 large potatoes), scrubbed and cut into fries
Add the potatoes to a large bowl with cool water. Let sit for 30 minutes, then drain the water and pat the potatoes dry well.
Preheat the oven to 425 degrees Fahrenheit and line a couple large baking sheets with parchment paper.
Toss the potatoes with the avocado oil, cornstarch, salt, and pepper, then spread them in a single even layer on the baking sheets.
Bake potatoes in a preheated oven for about 25 minutes, flipping halfway, until tender and crispy. Broil on high for about 3 minutes, if desired for further crisp.
Meanwhile, to a food processor, add the mayonnaise, Queso Fresco, olive oil, garlic, lime juice, and pepper. Process until well combined and mostly smooth, about 30 seconds.
