Bacon wrapped filet bites

Serves: 4-6
The perfect appetizer for a group: bacon wrapped filet bites with an Oaxaca and Cotija fondue.

  • 3 pieces of 6 oz Filet Mignon Steaks
  • 1 lb thick cut bacon
  • 2 cups heavy cream
  • 3 tbsp butter
  • 1/4 cup flour
  • 1 cup Rizo Bros Oaxaca Cheese
  • 1/4 cup rough chopped cilantro
  • 1/4 cup Rizo Bros Cotija cheese
  • 1 jalapeno, finely diced
  • 1 tbsp crushed garlic
  • 1 small red onion, finely diced


  1. Preheat grill or stovetop griddle to medium-high heat
  2. Cut filet mignon into 2” cubes and season with salt and pepper
  3. Wrap cubes of steak tightly with a strip of bacon
  4. Pierce ends of bacon with wooden skewer to keep bacon tightly wrapped around steak
  5. Set medium saucepan on range and set heat to medium heat
  6. Add butter to saucepan and stir until melted
  7. Add garlic, onion, and diced jalapeño to pan and cook until garlic is light gold in color
  8. Add flour to pan and stir until roux is lightly golden and smells nutty
  9. Add cream to pan and whisk until smooth
  10. Once the fondue lightly simmers, add Oaxaca cheese and whisk until smooth
  11. Place wrapped steak cubes on grill/griddle and turn after 4 minutes, let cook another 4 minutes
  12. Let cooked steak bites rest for 10 minutes
  13. Serve bites garnished with Cotija Cheese and garnish fondue with cilantro
