Serves: 4 Creamy avocados and savory black beans are a great match. Load them onto a quesadillas, add our Oaxaca cheese and dinner is served in minutes!
2 cups Rizo Bros Oaxaca Cheese (grated)
1 can Black Beans
½ Onion (sliced)
1 Bell Pepper (sliced)
1 tsp Chile Lime Seasoning
4 Flour Tortillas
1 tbsp Cilantro
Lime Wedge (garnish)
Heat flat top grill or frying pan and spray cooking spray to coat the bottom of the pan.
Place tortilla in the pan, add grated Rizo Bros Oaxaca Cheese, black beans, avocado, onion and bell pepper to one half of the tortilla. Sprinkle chile lime seasoning over the cheese side of the tortilla and fold the other half over the top of the cheese side.
Grill each side of the tortilla until golden brown and cheese inside is melted.
Garnish with lime wedge and serve with salsa and/or guacamole.
