Serves: 4-6 These crispy cotija brussel sprouts are the perfect side dish for any meal. They're roasted to perfection with garlic powder and olive oil, then topped with a generous amount of cotija cheese. Serve them hot and enjoy!
Drizzle 1 tbsp olive oil in the bottom of a nonstick baking sheet, distributing and brushing evenly. Add the cotija cheese to the pan and spread in a thin even layer. Place the brussels, cut side down, on the cotija coated baking sheet. Drizzle or brush with remaining 1 tbsp olive oil and sprinkle with garlic powder, salt, and pepper.
Bake for 15 mins or until the cheese is golden and the brussels are mostly tender as desired. Remove and let sit for 5 minutes before removing from pan and serving
