Shredded Chicken Torta

Get ready to indulge in a delicious shredded chicken torta recipe! Made with Rizo Bros Queso Fresco, telera rolls, and salsa, this sandwich is a flavorful and satisfying meal that's perfect for lunch or dinner.

INGREDIENTS:

  • 2 cups salsa of choice
  • 1 cup chicken broth
  • 1 lb chicken breast
  • ½ tsp salt
  • 6 telera or ciabatta rolls, sliced in half
  • 3 tbsp mayonnaise
  • Rizo Bros Queso Fresco, crumbled
  • Thinly sliced red onion
  • Sliced tomato
  • Shredded lettuce
  • Other toppings such as cilantro, radish, and fresh lime juice

PREPARATION:

  1. Add the salsa and chicken broth to a large pot over medium heat. Bring to a low boil then add the chicken breasts. Allow to cook for about 20 minutes, depending on the thickness of the chicken breasts, until cooked through to an internal temperature of 165 degrees Fahrenheit.
  2. Remove and let cool slightly. Shred the chicken with two forks or with an electric hand mixer, then season with the salt.
  3. Toast the telera rolls and spread the inside of each half with mayonnaise. Assemble the tortas: Place some shredded chicken on one half of a roll. Top with crumbled queso fresco. Top with sliced red onion, sliced tomato, and shredded lettuce or other desired toppings.
