One-Skillet Enchilada Breakfast Bake

Is there any better way to start the morning than with a hearty breakfast? With eggs, enchilada sauce, and delicious Cotija cheese, this is a fantastic way to begin the day.

INGREDIENTS:

  • 2 tbsp extra virgin olive oil
  • ½ red onion, diced
  • 1 sweet bell pepper, diced
  • 2 cups enchilada sauce
  • 3-4 small corn tortillas, torn
  • 3-4 eggs
  • ¼ cup Rizo Bros Grated Cotija, to serve
  • Cilantro, to serve
  • Lime wedges, to serve

PREPARATION:

  1. Heat a medium skillet over medium heat and add the oil. When the oil is hot, add the onion and bell pepper and cook until tender, about 5 minutes.
  2. Stir in desired amount of enchilada sauce and tortillas and simmer 2-3 minutes
  3. Make wells in the mixture and crack eggs into the wells.
  4. Cover and cook until the eggs are cooked to your liking, about 10 minutes. Top with the cotija.
  5. Serve with lime wedges, chopped cilantro, and a dollop of sour cream if desired.
