Slice avocados lengthwise and open to expose the pit. Remove pit and scrape avocado flesh into medium-sized bowl. Mash avocado with fork until avocado is soft, like a paste.
Add diced garlic, onion, cilantro to avocado mash and gently mix together using fork or spatula.
Squeeze the juice from 1 lime into avocado mixture. Season with freshly ground salt & black pepper to taste. Mix ingredients together.
Crumble ¼ cup of Rizo Bros Cotija Queso and sprinkle on top of guacamole. Serve with your favorite tortilla chips. Scoop, eat, repeat!
