Street Corn

Serves: 4-6
Street corn is not complete with a healthy amount of creamy, crumbled Queso Fresco.

INGREDIENTS:

  • 2 cups sweet corn kernels
  • 2 tb vegetable oil
  • ½ cup red onion, small diced
  • ½ jalapeno, seeds removed and finely chopped
  • ¼ cup cilantro, chopped
  • 1 roma tomato, small diced
  • 1 tb crushed garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • ¼ cup crumbled Rizo Bros Queso Fresco
  • 2 tb sour cream
  • 1 lime, cut into wedges

PREPARATION:

  1. Heat up a medium sauce pan on medium/high heat, add oil
  2. Add onions and jalapeno to pan, cook until onions are translucent
  3. Add corn, garlic, and tomato
  4. Cook for 3-4 minutes
  5. Season with salt, pepper, and cumin
  6. Remove from heat and add cilantro
  7. Spread sour cream on plate
  8. Place street corn onto sour cream
  9. Garnish with Rizo Bros Queso Fresco and serve with lime wedges
