Chili Lime Salmon and Cotija Street Corn

Nothing spices up a dish like some crumbled cotija & chili lime salmon!

INGREDIENTS:

  • ½ cup Rizo Bros Cotija Cheese 
  • 4 Salmon Filets
  • ¼ cup Cilantro 
  • 2 cups of Corn 
  • 1 tsp Garlic 
  • 1 tsp Garlic Powder
  • 1 tsp Lime Zest 
  • 2 tsp Lime Juice 
  • 2 tsp Chili Powder
  • 1 tsp Paprika 
  • 2 tsp Olive Oil 
  • ½ cup Sour Cream 
  • ¼ cup Red Onion 
  • Lime (garnish) 
  • Salt and Pepper (to taste)

PREPARATION:

  1. Season salmon filets with garlic powder, 1 tsp chili powder, paprika, salt and pepper. 
  2. In a pan, heat olive oil and sear seasoned salmon on both sides. 
  3. In a mixing bowl, add corn, sour cream, lime zest, lime juice, crushed garlic, cilantro, red onion, 1 tsp chili powder and Rizo Bros Cotija Cheese. 
  4. Once salmon is cooked through, plate over street corn, garnish with lime and serve.
