Shrimp & Cucumber Cotija Bites

Serves: 3-6
These Shrimp & Cucumber Bites are not only healthy, but super quick to whip up!

INGREDIENTS:

  • 4 tbsp Rizo Bros Cotija Cheese (grated)
  • 1 Cucumber 
  • 1 Avocado 
  • 1 tsp Garlic Powder 
  • 1 tsp Onion Powder 
  • 1 tsp Cumin 
  • 2 tsp Chile Lime seasoning 
  • 12 Shrimp (peeled and deveined) 
  • 1 tbsp olive oil 
  • Salt and Pepper (to taste)

PREPARATION:

  1. Slice cucumber into rounds. 
  2. In a mixing bowl, smash avocado and add garlic powder, onion powder and cumin. 
  3. In a separate mixing bowl, add shrimp, olive oil and chile lime seasoning, salt and pepper. Let shrimp marinate for 10 minutes.
  4. Grill marinated shrimp until pink outside and cooked through. 
  5. Layer avocado and grilled shrimp on cucumber slices. 
  6. Top layered cucumbers with Rizo Bros Cotija Cheese.
