White Chicken Enchiladas with Rizo Bros Oaxaca

These White Chicken Enchiladas are made with flour tortillas, shredded chicken, green chiles and topped with our delicious Oaxaca cheese!

INGREDIENTS:

  • 3 cups Rizo Bros Oaxaca Cheese 
  • 2 ½ cups Rotisserie Chicken (shredded) 
  • 1 can Green Chiles 
  • 2 tbsp Green Onion 
  • 2 tbsp Cilantro 
  • 8 Flour Tortillas 
  • 2 cups Sour Cream 
  • ½ cup Chicken Broth 
  • Salt and Pepper (to taste)

PREPARATION:

  1. In a mixing bowl, add chicken, 1 cup of sour cream, chicken broth, green chiles and salt/pepper. Mix to combine. 
  2. Fill tortillas with chicken mixture and roll up. 
  3. Place tortillas, seam side down in a greased baking dish. 
  4. Top tortillas with 1 cup sour cream and cover with Rizo Bros Oaxaca Cheese. 
  5. Bake in a 375 degree oven for 20-25 minutes or until bubbling and cheese is melted. 
  6. Garnish with cilantro and green onions.
